Instant Pot Ube Cheesecake

Indulge in the delightful combination of creamy cheesecake with the unique flavor of ube (purple yam) in this Instant Pot Ube Cheesecake. A perfect fusion of Filipino and Western dessert influences!

Ingredients:

  • 2 cups crushed graham crackers

  • 1/2 cup melted butter

  • 4 packages 32 oz cream cheese, softened

  • 1 cup sugar

  • 4 large eggs

  • 1 cup sour cream

  • 1 teaspoon vanilla extract

  • 1 cup ube purple yam puree

  • Purple food coloring optional

  • Whipped cream and ube halaya for garnish

Instructions:

Mix crushed graham crackers with melted butter and press into the base of a springform pan to create the crust


In a large bowl, beat cream cheese and sugar until smooth


Add eggs one at a time, beating well after each addition


Stir in sour cream and vanilla extract


Fold in ube puree and add purple food coloring if desired for a vibrant color


Pour the batter over the crust in the springform pan


Cover the pan with aluminum foil


Pour 1 cup of water into the Instant Pot and place the trivet inside


Carefully place the springform pan on the trivet in the Instant Pot


Seal the Instant Pot and set it to Manual/Pressure Cook for 35 minutes on high pressure


Allow natural pressure release for 10 minutes, then quick release any remaining pressure


Carefully remove the cheesecake from the Instant Pot and let it cool to room temperature


Refrigerate for at least 4 hours or overnight before serving


Garnish with whipped cream and ube halaya before serving

Ingredients:

  • 2 live lobsters about 1

  • 5 pounds each

  • 1 cup water

  • 1/2 cup dry white wine

  • 1/4 cup unsalted butter, melted

  • 2 cloves garlic, minced

  • 1 teaspoon Old Bay seasoning

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions:

Put the trivet made of metal inside the Instant Pot


Put white wine and water into the Instant Pot


Melt the butter and add the garlic, Old Bay seasoning, salt, and pepper to a small bowl


Carefully cut the lobster claws and tails in half lengthwise with kitchen shears


Use a brush to cover both halves of the lobster with the butter mixture


Put the lobster halves on the trivet inside the Instant Pot


To seal the Instant Pot, close the lid and turn the valve to the left position


Put it on "Manual" or "Pressure Cook" and cook for 3 minutes on high pressure


Do a quick pressure release after the cooking is done


Open the lid slowly and carefully, then move the lobster halves to a serving platter


Add fresh parsley on top and serve hot

This Pizza Chicken is a tasty take on regular chicken. It has the flavors of pizza toppings and juicy chicken breasts for a meal that is both filling and easy to make.

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1 cup pizza sauce

  • 1 cup shredded mozzarella cheese

  • 1/4 cup sliced pepperoni

  • 1/4 cup sliced black olives
